Sweet Potatoes Cooked
2 Sweet Potatoes
Fresh herbs ie. Rosemary, Sage, Tarragon
Salt and Pepper
Preheat oven to 400 degrees F.
Slice Sweet Potato in half. Place the sliced side on cutting board and slice 5 to 7 creating your “fry” slice around 1/4 of an inch thick. Place slices in oiled roasting pan. Add a dash more olive oil on top of the sweet potatoes. Sprinkle with salt and pepper. Choose your favorite fresh herb, but up in small bits and sprinkle on top. You may also use fresh garlic too.
Pop in 400 degree oven. Total roasting time is around 40 minutes. After 20 minutes be sure to flip the potatoes.
