I have worked on a few projects that at some stage required the design of the interface as well. Below are projects where I have designed GUI elements for.

For this project the team worked with the elderly living in nursing homes, to research the use tools of Interaction Design to provide a meaningful impact to their lives.
As a group we decided to focus our idea on improving communication between people living in elderly homes and the outside world. Our core aim and value we wanted to create for the elderly was, how do you bring the joy of receiving a letter into an email?
Below is a quick overview of how we built the GUI.
The GUI is for a touchscreen device capable of wi-fi and telephony connectivity.

Have and Have Nots

Two sets of data were used to try and demonstrate any correlation between them. We wanted to see if there was a relation between computer owners and internet users - if either affected the numbers of the other, and more importantly, how?
We plotted the the values for the both data sets for 10 countries (we chose the countries of the students on the pilot year).
